Food traditions can reveal quite a lot about a culture actually, because they often reflect local history and values. For example, in Hangzhou where I'm from, we have this dish called Dongpo pork - it's slow-cooked for hours with soy sauce and wine. The way we take time to prepare it shows how much value we place on patience and craftsmanship in our culture. Even the way people share food here - putting dishes in the middle of the table for everyone - reflects the importance of community. That said, with globalization, some food traditions are changing - like how younger people in Shanghai now often eat quicker meals during workdays. But the traditional dishes still hold meaning during festivals and family gatherings.
